How do you prepare the patties for a Smashburger?
When preparing a smashburger, place a meatball on a well-heated baking tray, preferably cast iron, after which you press it vigorously with a hamburger spatula or burger smasher (easiest with a piece of baking paper or olive oil in between) into a flat burger. This creates a deliciously crispy crust, a result that... not can be achieved in a grill pan or on a standard BBQ grill.
You fry the burger patties for about 1.5 to 2 minutes on each side until they are completely brown. After turning the burger, the cheddar can be placed over it, so that it can melt over the burger.

Ingredients
- 2 large brioche buns available at most bakeries
- 300 gram ground beef portioned into balls of 75 grams each
- 1 meat tomato 2 slices cut about 1 centimeter thick
- 1 crop little gem lettuce halved, picked apart so that the leaves remain whole
- 40 gram jalapeño on sweet and sour cut into slices
- 4 slices cheddar cheese
- 1 large white onion Halved, cut into fine slices

For the sauce
- 2 tablespoons mayonnaise
- 2 tablespoons fine mustard

Instructions
- Heat your cast iron pan or griddle on the BBQ or stove so that it is nice and warm before use.
For the sauce
- Cut the cornichons as described in the ingredients list.
- Mix all sauce ingredients together until smooth.
Preparation method
- Cut the onion, jalapeño, tomato and lettuce as described in the ingredients list.
- Cut open your brioche buns.
- Portion the minced meat into balls of 75 grams.
- Melt the butter and fry the onions for about 3/4 minutes until golden brown.
- Toast the inside of the buns until golden brown and crispy, be careful, they burn quickly!
- Now place the meatballs on the baking tray, place the papers on top and press the balls as flat as possible with your hamburger spatula or burger masher. Then remove the baking paper. (if you don't have baking paper, spread a little olive oil on your hamburger spatula or burger masher)
- Fry this for 1.5 to 2 minutes and then turn them over with your hamburger spatula. Make sure that your burger patty comes off completely with your spatula and does not stick. The crusts are the best flavors!
- Sprinkle the Smashburgers with salt and pepper and place a slice of cheddar on each patty. Fry this also for 1.5 to 2 minutes. Place the burgers on top of each other
