What a party!

In a word “wow!”. That's how you can describe this fantastic Oklahoma smashburger. I've made quite a few burgers and smashburgers in my life but this is truly one of my favorites! “Less is more” is the right description for this taste sensation. The ingredients are simple and limited, beef, a brioche bun, onions, cheese and sauce.

Oklahoma smash burger

The Oklahoma smashburger is a minced beef ball with white onion rings that you flatten on a hot griddle, resulting in a tasty, crispy outside and a juicy inside with caramelized onion. Previously I also made another tasty Smashburger, you can try this one here to look at.

Pickling your own pickles

Making your own pickles is easy and fun! Start by choosing firm mini cucumbers. You usually get these in the regular supermarket. Make a mixture of water, vinegar, salt and sugar for the brine. Add spices such as dill seeds, mustard seeds, garlic and red pepper flakes for flavor. Then pour the brine over the cucumber in a clean jar and make sure everything is well covered. Let it sit in a cool place for at least 24 hours. After a while, your pickles will be ready to eat! Delicious on your Smashburger or of course with something else such as a salad or sandwich.

Equipment

  • Cast iron griddle or BBQ with cast iron plate(this is best for frying your smashburger, a frying pan is also possible, but then the taste of your burger will be less tasty)
  • Preserving jar or other glass jar with lidfor the pickles
  • Panto boil the water, vinegar and sugar
  • Cutting board
  • Chef's knife
  • Bread knife
  • Hamburger spatula or burger masher
  • baking papercut into square pieces for your burgers

Ingredients
  

  • 1 large brioche bun or hamburger bun cut in half
  • 300 gram ground beef portioned into balls of 100 grams each
  • 3 slices cheddar cheese
  • 1 large white onion cut into very thin rings

Pickled pickle

  • 400 gram mini or snack cucumber available at the normal supermarket
  • 300 gram vinegar
  • 200 gram water
  • 150 gram granulated sugar
  • herbs and spices such as dill seed, fennel seed, pepper, bay leaf and chili flakes.

The sauce

  • 2 tablespoons mayonnaise
  • 2 tablespoons fine mustard
  • 2 tablespoons Ketchup

Instructions
 

Pickled pickle (24 hours marinating time)

  • Bring the vinegar, water and sugar to the boil.
  • Place the mini cucumbers in the preserving jar together with the herbs and spices
  • Pour in the liquid, close the jar and let it marinate in the refrigerator for 24 hours.

Preparation

  • If you use a BBQ, heat the BBQ with the cast iron plate in it to 200/220 degrees.
  • Make balls from the minced beef of 100 grams each.
  • Cut the onions and the brioche bun as described in the ingredients list
  • Cut the pickle into small slices after they have marinated.

The sauce

  • Mix all ingredients together. (mayonnaise, mustard and ketchup)

Baking Smashburgers and toasting brioche buns

  • Toast the brioche bun until golden brown on the baking tray.
  • Place the meatballs on the baking tray, press the onion rings on top, place the wrappers on top and press the balls as flat as possible with your hamburger spatula or burger masher. Then remove the baking paper. (if you don't have baking paper, spread a little olive oil on your hamburger spatula or burger masher)
  • Fry this for 1.5 to 2 minutes and then turn them over with your hamburger spatula. Make sure that your burger patty comes off completely with your spatula and does not stick. The crusts are the best flavors!
  • Sprinkle the Smashburgers with salt and pepper and place a slice of cheddar on each patty. Fry this also for 1.5 to 2 minutes. Place the burgers on top of each other

Building the citizen

  • Spread a good tablespoon of sauce on the bottom.
  • On top of that the burgers with the cheddar and then another tablespoon of sauce.
  • Then the pickles and the lid.
